“The Šavrinka once carried this to Trieste. Today, it stays right here.”

Across eighteen hectares above the village grow olive trees, vines, and a garden. From them come organic olive oil, Refosco, Malvasia, Yellow Muscat, prosciutto, pancetta, and pickled vegetables. This is the very produce the Šavrinka used to carry in her basket across Istria to Trieste so her family could survive. What was once trade born out of necessity has today become hospitality.
